The production of Champagne R. Faivre Le Mont Pinson 2019

Made exclusively from Meunier grapes, this cuvée comes from the 2019 harvest in the Le Mont Pinson locality. This is an atypical locality in the village due to its limestone soil. David Faivre's winemaking brings depth to the wine.

The terroir

Located in Belval-sous-Châtillon, the Le Mont Pinson plot is planted on clay soils with a tendency towards limestone. This area, which is rarer in the valley, promotes a straightforward and vibrant expression of Meunier, combining tension and generosity. The gentle exposure of the hillside and the uniform ripeness of the grapes give the wine a full-bodied, elegant and structured profile.

Vinification

After fermentation in stainless steel vats, the wine is aged for ten months in oak barrels to gain complexity and texture. The absence of malolactic fermentation preserves the liveliness of the 2019 vintage. No fining or filtration is carried out. The champagne is then aged for 36 months in the cellar before disgorging, for perfect integration. Final dosage: 0.5 g/L (Extra Brut).

The 2019 vintage

The 2019 vintage is distinguished by its generous maturity and aromatic concentration. On the limestone terroir of Belval, Meunier gains depth and density while retaining a remarkable fruitiness. The wine combines power, freshness, and a salty finish, characteristics of a very good year for the vineyards in the valley.

Tasting notes

  • Color

    Deep gold with coppery highlights. Fine, regular effervescence. The clarity reveals the maturity of the Meunier and the care taken in the aging process.

  • Nose

    Rich and expressive. Aromas of ripe yellow fruit, toasted hazelnut, brioche, and sweet spices. A hint of smoke and chalk on the finish.

  • Palate

    Full-bodied, structured, and velvety. Creamy texture supported by a fine tension. Red fruit mingles with notes of almond and orange peel. Long, mouthwatering, and slightly spicy finish.

Food pairing

The richness of Meunier and the structure of the 2019 vintage call for flavorful, lightly simmered dishes. The texture of the wine pairs perfectly with white meats or mushrooms.

Storage and serving

How to store this cuvée

Store Le Mont Pinson 2019 at 10–12°C in a dark, stable cellar. The barrel-aged Meunier will develop harmoniously, gaining complexity after a few years. Storing for 8 to 10 years will allow brioche and spicy notes to blossom.

Aging potential

Optimal window: 2025–2035. From 2025 to 2028: expressive fruitiness and velvety texture. From 2029 to 2032: maturity, toasted accents, and increased length. 2033–2035: tertiary richness, honey, and undergrowth, while retaining a salty structure.

How to serve Le Mont Pinson 2019?

We recommend serving Le Mont Pinson 2019 at 10°C in tulip glasses. A short aeration (5 to 10 minutes) will allow it to express the full complexity of its barrel aging.
