Le Léon 2006 is a cuvée made exclusively from Pinot Noir grapes from the single parcel of land known as Le Léon, in Aÿ (Grand Cru terroir).
55% of Le Léon 2006 is vinified in stainless steel tanks and 45% in wood. Malolactic fermentation was not carried out, in order to preserve the wine's great freshness and ageing potential. The dosage is Extra Brut (4.25g/l) to highlight the fine balance between liveliness and complexity.
Philipponnat's Léon 2006 has been aged for 7 years in the company's cellars to develop secondary and tertiary aromas, the result of prolonged ageing on fine lees.
This champagne has a golden color studded with fine, creamy bubbles.
On the nose, this cuvée opens with notes of citrus, then evolves after a few moments into aromas of cocoa and gingerbread.
On the palate, Cuvée Le Léon 2006 is distinguished by a round, supple attack, which gives way after a few moments to intense, gourmet notes of citrus fruit, white pepper, sweet pepper and wild strawberries, typical of the minerality of the Aÿ terroir.
This champagne is a perfect match for seafood and iodized fish. Rather than the sea, it would be better to pair it with the land and a Bellota ham or roast lamb.
