The L'Ambitieuse cuvée is an elegant Blanc de Blancs champagne with lovely citrus and ripe fruit notes. It is perfect as an aperitif or with fish dishes.
To make this champagne, Antoine and Clément Bouret, two brothers who took over the family estate, blend grapes from their plots in Chouilly and Le Mesnil-sur-Oger, two highly complementary Grand Cru terroirs in the Côte des Blancs. While Chouilly brings roundness and fruit, Le Mesnil-sur-Oger adds minerality and tension.
The Chardonnays are vinified and aged partly in stainless steel vats and partly in oak barrels.
After bottling, L'Ambitieuse spends 5 to 6 years in the cellars of the house to gain complexity. Its dosage is Extra Brut, simply highlighting the great minerality of the Côte des Blancs terroirs.
L'Ambitieuse by Pertois-Lebrun has a golden color with pale yellow highlights. Its bubbles are fine, lively, and persistent.
On the nose, there are lovely citrus notes, a touch of chalk, and rich pastry and fruit aromas.
The attack on the palate is full, lively, with a beautiful, mellow effervescence. On the palate, there are lovely lemony notes and the characteristic minerality.
The finish is long, persistent, and delicately iodized.
