The 2016 Extra Brut from Mailly Grand Cru is a delicate and elegant cuvée. It is a fruity, mineral, and intense champagne.
This cuvée is made from 75% Pinot Noir and 25% Chardonnay grapes grown in the Grand Cru terroir of Mailly. This is a terroir where chalk lies just a few centimeters below the surface.
The vinification was carried out in stainless steel vats, but a small portion of the wines were aged in wood. The bottles then undergo traditional aging in the Maison's chalk cellars to promote the development of the organoleptic profile. The dosage of this Extra-Brut at 3 g/L is light, accompanying the wine without masking it.
The bouquet reveals a delicate world, evoking almonds and nuts, followed by notes of roasting on the second nose.
On the palate, the wine expresses citrus nuances, beautiful minerality, and a touch of slightly toasted complexity. Full of finesse, the palate unfolds naturally with great balance.
