The Au bout du Chemin cuvée from Girard-Bonnet champagne expresses all the finesse and purity of Chardonnay from the Vertus Premier Cru terroir. With its generous palate and subtle aromatic notes, it is a perfect cuvée for a lovely aperitif.
The Au bout du Chemin cuvée is made from 100% Premier Cru Chardonnay, exclusively from the chalk-rich clay-limestone soils of the Vertus terroir. This blend comprises 80% of the 2021 harvest and 20% of reserve wines. This blend of wines from the latest harvest and reserve wines achieves perfect balance.
The vinification uses indigenous yeasts, partly in stainless steel vats and partly in oak barrels, to preserve the authenticity of the aromas. The champagne is aged on lees for several months, adding richness and complexity. This cuvée is extra brut, with only 3 g/L of sugar, to preserve the purity and energy of the Chardonnay.
The Vertus terroir offers the ideal setting for producing exceptional Chardonnays. This Premier Cru village, located south of the Côte des Blancs, is famous for its clay-limestone soils on Campanian chalk, which give the wines a beautiful minerality and remarkable elegance.
The Girard-Bonnet estate is committed to organic and biodynamic viticulture, certified organic and Demeter since 2023. This approach involves, among other things, the elimination of herbicides, eco-grazing, and the use of herbal teas and essential oils. This allows each plot to reveal its full expression.
The Au bout du Chemin cuvée has a pale gold color with a fine, persistent effervescence.
Its expressive nose offers aromas of citrus, lime and grapefruit, accompanied by subtle floral and white fruit notes.
On the palate, it is both generous and precise, with flavors of pear and hazelnut. The finish is lively, marked by beautiful minerality and remarkable persistence.
