Cuvée Petraea by Maison Francis Boulard is an intense, generous champagne made from three grape varieties: Pinot Noir (60%), Chardonnay (20%) and Pinot Meunier (20%). This Brut Nature cuvée expresses the clay-limestone terroirs of the Marne Valley and Montagne de Reims. Very rich, it is the perfect accompaniment to poultry, fish and cheese.
This champagne is made using the unique Spanish solera method. This vinification method involves stacking the barrels several high. Each year, the volume drawn from the barrel (25%) below is replaced by two new harvests from the two heights above. In this way, the barrel is filled with several vintages. The old wine educates the young. This perpetual reserve was started in 1997.
Fermentation here is spontaneous, i.e. we let the grapes' natural yeasts do their work. The rest of the fermentation is traditional, and takes place in small barrels or foudres. There is no dosage, making this a Brut Nature champagne.
The deep gold color offers delicate, fine bubbles.
The first nose is rich and powerful. It delivers fruity aromas that evolve into more gourmand notes of white flowers and spices.
The palate is equally sumptuous, blending intensity and freshness.
