The 2019 Œil de Perdrix cuvée from Doyard Champagne is a tribute to Champagne traditions, expressing the perfect balance between power and finesse. This slightly pink-tinged champagne is ideal for accompanying refined dishes.
The production of Doyard's 2019 Œil de Perdrix champagne
This cuvée takes its name from the 18th century and the color of the juice obtained when pressing Pinot Noir grapes, which was slightly pink. Today's techniques make it possible to obtain white juice from black grapes, but this was not the case at the time. An Œil de Perdrix champagne was therefore a champagne with a slightly pink hue.
The 2019 Œil de Perdrix cuvée is composed of 75% Pinot Noir from the Grand Cru vineyards of Aÿ and 25% Chardonnay from the Grands Crus of Avize. These exceptional terroirs bring unique aromatic richness and remarkable mineral freshness.
The Pinot Noir is vinified in stainless steel vats to preserve its purity, while the Chardonnay undergoes fermentation in oak barrels (which have previously held up to five wines) to bring subtle complexity. No sugar is added (no chaptalization), and only the first pressing is used for the Chardonnay. Malolactic fermentation is not carried out in order to preserve a beautiful liveliness. The cuvée is dosed as Extra Brut to highlight the purity of the vintage and the terroir.
The 2019 vintage
The 2019 vintage in Champagne was marked by exceptional weather conditions. A hot, dry summer promoted perfect ripening of the grapes, combining aromatic concentration and natural balance. The Pinot Noirs from Aÿ stood out for their intensity, while the Chardonnays from Avize brought freshness and elegance, resulting in a vintage of great precision.
