Christian Gosset's Cheminée Aÿ Grand Cru 2017 is a gastronomic champagne with an assertive personality.
Christian Gosset is a 55-year-old winemaker! After 35 years of experience forged on the family estate, he decided to strike out on his own and create his own champagnes.
This cuvée is made exclusively from Pinot Noir grapes from a plot planted in 1993 in the "La Cheminée" area of the Aÿ Grand Cru commune. This parcel is located at the top of the hillside, facing west, on a steep 45% slope with chalky soil.
Vinification takes place entirely in oak barrels, as naturally as possible, without filtration or chilling. The wine is very lightly dosed at 1 g/L.
This cuvée has a beautifully luminous golden color.
The nose is open and deep, with notes of pastry and cooked fruit, almond, cookie, plum, ash and black tea.
On the palate, the attack is powerful and broad, followed by a sensation of concentration. The vinosity reveals itself on a dense, lively, well-structured body. The effervescence melts into the body of the wine, and the dosage is imperceptible. The whole is very harmonious, producing a warm, velvety texture with aromas of cooked fruit and brandy. The finish is very long, elegant, salivating, saline, slightly ardent and adorned with the perfume of quetsches.
This Champagne La Cheminée Aÿ Grand Cru 2017, by Christian Gosset, is earthy, rich, elegant and tender. You can therefore choose veal, beef and venison fillets; sweetbreads; poulardes de Bresse; capons or creamy cheeses such as Époisses or Livarot.
