The Première Cuvée Extra-Brut by Bruno Paillard is a remarkably elegant champagne, combining minerality and aromatic richness. It is an ideal cuvée for aperitifs.
This champagne is made exclusively from the first pressing of the grapes, which is the purest. Only the first 50 centiliters produced from each kilo of grapes are used for the Première Cuvée Extra-Brut. The Bruno Paillard estate has vineyards spread across 35 different terroirs. Each vintage is vinified separately, in small oak barrels or stainless steel vats, allowing total freedom during blending.
The Première Cuvée Extra-Brut is the result of a blend of mainly Pinot Noir (45%), complemented by Chardonnay (33%) and Pinot Meunier (22%), from more than 30 crus. Reserve wines account for at least 30% of the blend and up to 50% when the year requires it.
After three years of aging in the cellars of Bruno Paillard, the Première Cuvée Extra-Brut is disgorged, the date is indicated on the back label, and it is dosed as Extra Brut.
This champagne has a sparkling straw color with fine, lively bubbles.
On the nose, Bruno Paillard's Première Cuvée Extra-Brut reveals notes of citrus and red fruits, followed after a few moments by rounder, more indulgent aromas.
On the palate, the attack is lively and frank. The minerality glimpsed on the nose returns, followed by aromas of lemon, grapefruit, and brioche. It is a rich, full-bodied wine with good length, underscored by a clean, salty finish.
The Première Cuvée Extra-Brut Bruno Paillard is perfect as an aperitif or paired with scallops, lobster, or turbot.
