      The production of Bruno Paillard's N.P.U. 2009 champagne

      N.P.U. 2009 champagne is a blend of 50% Chardonnay and 50% Pinot Noir, sourced exclusively from six of the most prestigious Grands Crus in Champagne: Oger, Le Mesnil-sur-Oger, Chouilly, Verzenay, Mailly-Champagne, and Bouzy.

      The winemaking process follows a rigorous approach:

      • Fermentation in small old oak barrels for 10 months, giving a complex structure and a subtle woody patina.
      • Aged on lees for over 12 years at a constant temperature of 10.5°C.
      • Disgorging in November 2022, followed by an additional 18 months of rest before release.

      This long process magnifies the aromatic richness and depth of the wine, while maintaining a beautiful tension. With a dosage of 4.5 g/L, this Extra Brut champagne expresses all the purity of the vintage.

      The 2009 vintage

      The 2009 vintage in Champagne was marked by a hot, dry summer, allowing the grapes to ripen gradually and evenly. Thanks to the water reserves accumulated in the spring, the grapes reached perfect maturity while retaining refreshing acidity. This vintage is distinguished by its depth, salinity, and aromatic brilliance.

      • Appearance

        The color is a dense, luminous liquid gold with sparkling highlights. The effervescence is fine and regular.

      • Nose

        An intense and evolving bouquet: notes of cherry,candied citrus and white flowers (syringa, jasmine), which then open up to aromas of calisson, nutmeg and fresh ginger. The finish evokes sandalwood and peppermint.

      • Palate

        A serene and ample attack, revealing a precise and elegant structure. The lingering salinity interacts with the fleshy texture of the fruit, offering a remarkably long, vibrant and harmonious finish.
