Blanc de Noirs Grand Cru makes its grand entrance into the Bruno Paillard range! This new creation was born from a desire to offer a rich and precise expression of Pinot Noir from the northern crus of Champagne by combining the diversity of different vintages.
This cuvée is made exclusively from the first pressings of Pinot Noir grapes from four Grands Crus: Verzenay, Mailly, Verzy, and Bouzy. Three of these vineyards are predominantly north-facing. These historic chalky terroirs combine the elegance and distinctive depth of Pinot Noir.
Vinification is mainly carried out in stainless steel vats, but a touch of wood (15 to 20% depending on the year) enriches the blend. The wine is aged on its lees for three years and, after disgorging, the Blanc de Noirs Grand Cru is left to rest for at least six months in the cellar. Like all Champagnes from the Bruno Paillard House, it is an Extra-Brut, dosed at 3g/L.
This champagne has a brilliant golden color with coppery highlights, and its effervescence is fine and lively.
The nose is lively and velvety with aromas of red rose petals, cherry, pink grapefruit, and Timut pepper. With aeration, a bouquet of sweet spices and a sensation of great freshness are revealed.
On the palate, we find the chiseled, chalky texture announced on the nose. The attack is striking and mouthwatering, where the salinity and delicacy of the fruit intertwine in an umami that calls for food. The depth of the wine gradually emerges, around notes of cherry flesh, kumquat, and quince.
This Blanc de Noirs from Maison Bruno Paillard is the ideal aperitif companion for grilled shrimp or pata negra, but will also find its place at the table with poultry, game birds, or delicately smoked fish such as sea bass or red mullet.
