Bruno Paillard's Assemblage 2012 is a generous, expressive Champagne that's perfect as an aperitif or with delicate dishes.
This cuvée is made from the purest first pressings of grapes from eight of Champagne's finest Crus. This champagne is a blend of Chardonnay (40%) and Pinot Noir (60%), 20% of which is vinified in small oak barrels. This cuvée is aged for eight years in the House cellars, including a minimum 12-month rest period after disgorgement, and the dosage is 4.5g/L.
Each vintage cuvée bears authentic witness to a year, a style and a singular taste experience. Bruno Paillard's aim is to convey the perfect expression of the vintage through the packaging. The story of each great year in Champagne is thus illustrated by a singular work of art, rich in diversity. The label features Claude Viallat's work on the theme of "Sillons".
The color of this champagne is a beautiful yellow-gold and the effervescence is persistent and fine.
The nose blends stone fruit, dried fig, honey and fresh ginger with intense notes of white flowers. It then opens with aromas of cocoa and ashy notes.
The attack is lively and precise, and precedes a palate faithful to the nose, which seduces with its greediness, concentration and refreshing, persistent salinity.
This Cuvée Assemblage 2012 from Maison Bruno Paillard is a perfect match for noble fish, confit lamb, pigeon, quail and spicy cuisine.
