La Côte aux Enfants 2019 comes from a steep plot in Aÿ, patiently restored by Jacques Bollinger at the beginning of^{the 20th} century. Today, Bollinger owns all 4 hectares of this historic monopoly, which gives the wine its unique identity. The vinification is carried out "à la bourguignonne," fully revealing the nobility of Pinot Noir.

• Pinot Noir (100%): from the La Côte aux Enfants vineyard, with one-third whole-cluster fermentation for structure and depth.

The 2019 vintage

The year 2019 was marked by hot, dry weather, favoring small, concentrated berries and remarkable ripeness. The conditions allowed for a combination of aromatic richness, freshness, and tannic balance. A powerful vintage, perfectly suited to the production of great Champagne reds.

The terroir

Côte aux Enfants is located on the steep slopesof Aÿ Grand Cru, a historic Pinot Noir terroir. The chalky clay-limestone soils, ideal exposure, and steep slopes give the wine intensity, tension, and deep aromatic expression. Once prized by Henry IV, the red wines of Aÿ are among the most prestigious in Champagne.

Vinification

Parcel-by-parcel vinification, with slow and gradual cold maceration before fermentation, in order to gently extract color and aromatics. Aging is carried out in small oak barrels, bringing structure, woody finesse, and complexity. Confidential production, reserved for exceptional vintages.

  Deep, luminous garnet, reflecting the concentration of the vintage.

• Nose

  Powerful and precise: Bigarreau cherry, blackberry, licorice, vanilla, and sweet spices. Floral notes of violet and a subtle hint of bergamot.

• Palate

  Full-bodied and silky texture. Flavors of jammy black fruits, violet, spices, pepper, truffle, and undergrowth. Long and structured finish, supported by very fine tannins.

How to store this vintage

Store La Côte aux Enfants 2019 at 54–57°F in a cool, stable, and humid cellar (70% humidity). Its structure and concentration will allow it to develop aromas of undergrowth, truffle, and leather.

Aging potential

Optimal window: 2026–2040. From 2026 to 2032, the wine reveals its pure fruit and tension. Between 2033 and 2038, the texture becomes more velvety, with notes of spices, truffle, and blond tobacco. From 2039 onwards, the complexity becomes deep and harmonious.

How to serve La Côte aux Enfants 2019?

Serve at 16°C in a Burgundy-style red wine glass. Aerating for 30 minutes will enhance the floral and spicy aromas and the noble character of the Pinot Noir d'Aÿ.
