The Clos Saint Hilaire 2006 from Maison Billecart-Salmon is a unique Blanc de Noirs cuvée named after the patron saint of Mareuil-sur-Aÿ. This single vineyard wine is incredibly distinctive and has all the qualities of a great wine for aging, with depth and character.
2006 is a sunny vintage, mature and warm, deep and immediately perceptible.
This great champagne comes from a single one-hectare plot of old Pinot Noir vines planted in Mareuil-sur-Aÿ in 1964, enclosed and in a single block. The wine was vinified entirely in barrels and benefited from 159 months of maturation on lees.
The color of this champagne reveals a deep golden yellow hue, highlighted by intense golden reflections. The effervescence is graceful, with fine bubbles tempered by the patina of time.
The nose exudes a noble, racy expression and the olfactory impact of great vinous complexity with a hint of biscuit and notes of fresh roasted hazelnuts and white pepper. A refined development highlights the sparkling concentrations of ripe, intense fruit (nuts and sweet spices).
On the palate, this champagne reveals a creamy sensation of beautiful, chiseled finesse, with natural flavors of citron zest, almond biscuit, and white pepper. This powerful wine, with its majestic character, lingers on the finish with incredible aromatic persistence and notes of sweet citrus flesh, cardamom, and vanilla cabbage.
A great cuvée with a unique dimension, where each rare vintage produces no more than 6,000 bottles. This micro cuvée will surprise you when paired with wild turbot with Burmese coffee.
