Millésime 1999 from the house of Ayala is a superlative, hedonistic champagne to be shared over an aperitif or a gastronomic meal.
1999 was an outstanding year for the vines, with good climatic conditions and a harvest which, although it took place in the rain, produced extremely good quality grapes.
Ayala Millésime 1999 is a beautiful deep gold with fine and poised effervescence.
It expresses lusciously fruity notes (very ripe yellow fruits), then a certain freshness and a little spiciness on the second nose.
The complex palate structure of this Millésime 1999 will be the delight of all amateurs of grand champagne, with its creamy honey aromas, toasted notes and an enduring vivacity with vinous undertones.
Altogether it is a beautifully developed champagne, blended from 80% Pinot Noir and 20% Chardonnay, from almost exclusively Grand Cru parcels.
Ayala Millésime 1999 will show itself to best advantage with a carpaccio of foie gras, a tender rib of veal, or braised turbot.
