Salon champagne was created in 1901 by Aimé Salon, who wanted a champagne that suited his taste, for himself and his friends. This champagne is made from a single grape variety, Chardonnay, from a single vineyard, Mesnil-sur-Oger, and a single vintage! It is made without any blending or malolactic fermentation in order to preserve its high acidity and promote aging. The wines are aged for an average of ten years before revealing the distinctive flavor of Mesnil Chardonnay, a combination of ripe grapes and fresh chalk. Salon champagne is the most noble expression of the Côte des Blancs. A vintage is only produced if the quality is deemed perfect.
