The Rosé de Saignée from Coessens shows great complexity with its acidulous and gourmand aromas.
It is made using the ancient free-run (or saignée) method where the grapes are lightly crushed allowing the juice to come into contact with the skins, liberating the aromas and allowing tannins and colour to impregnate the juice, giving the wine its unmistakeable taste.
Like all their champagnes, the Coessens Rosé de Saignée is made exclusively from Pinot Noir. It is a cuvee that undergoes malolactic fermentation for greater smoothness, and which is aged for 36 months on lees.
Its dosage at 9g/L adds a gourmand touch to the aromas.
I am intransigent when it comes to making my Rosé de Saignée. I make only 1000 bottles each year. This Rosé de Saignée is made entirely from the 2008 harvest even though we don’t call this a vintage champagne. When opening the bottle I advise letting it air for 3 to 4 minutes to allow a maximum of aromas to be released before tasting.
